Here’s some new stuff we’ve been on a kick with lately. (If you haven’t seen the previous posts about what we’ve been liking, check them out here and here.)
Made these muffins for my stud muffin on Valentine’s Day. Find the recipe here (I used an egg replacer as a substitute which you can find a variety of kinds here). Cheesing (pun intended) for our family Valentine’s dinner of homemade pizza (Pfeiffer’s first time trying ‘za). Pfeiffer has a great time making hers. Pfeiffer had veggie on cauliflower crust, I had veggie on whole wheat, and Jeff had a pepperoni/veg mix on regular. Pfeiffer and I used Violife mozzarella cheese. As a note, I really try to limit the food substitutes because they are so processed but come on, pizza without any cheese just isn’t the way to experience it your first time. She enjoyed making it and eating the toppings more than she liked the finish product. She was probably too full! Coleslaw mix with Bitchin’ Sauce and our standard stir-fry. Here’s where you can find Bitchin’ Sauce in your neighborhood. Had to have some vegan king cake while back home in Pensacola to celebrate Mardi Gras. If you live in the area, check out all of Pretty Baked in Pensacola’s goods. Stovetop popcorn with fancy oil and salt courtesy of Bodacious in Pensacola. Tallahassee has a local oil and vinegar place that I’m looking forward to checking out. Smoked tofu is always a hit. Marinate firm tofu in Tamari and Liquid Smoke and bake. She probably ate almost an entire block that afternoon. Did you know if you’re an Amazon Prime member you can get free grocery delivery with Whole Foods? You’ll pay to tip the driver but other that that it’s pretty neat in a pinch. I’d you don’t have Prime, I highly recommend it (find out more here). Highly recommend Hodo, especially like their Five Spice Nuggets. Run, don’t walk, to Costco now to buy this. It has been a hit for everyone who has tried it! Oh and I just saw that Target sells it too! Here are the ingredients. I need to try to make it but for now, while Costco still sells it, I’ll pick it up when I go. And sugar free applesauce popsicles are still a crowdpleaser. Here’s Pfeiffer helping me heat up some corn on the cob on her new ‘see see’ kitchen helper that my stepdad, Larry, made her. She loves it! Found this corn frozen at Publix but Costco also has it fresh now. Latest Costco trip.

Haha oh yeah, think about it, pretty much all her senses were involved so I could see that being way fun. Finger painting but getting to eat the product haha
